Popping boba, or bursting boba, is a famous type of boba pack with juice inside it. When you chew it, it pops and releases a yummy burst of flavour! The outside of pearls is made using alginate and calcium to form a special thin shell. The Popular flavours in this boba include strawberry, mango, kiwi, passionfruit, peach, and coconut. It feels soft at first, then turns into juicy waves!

Crystalline Boba: The Best Fruity Alternative to Tapioca Pearls

This type of boba is obtained from sweetened fruit juices and a gelling-like ingredient such as agar or konjac powder instead of tapioca starch. The agar and konjac are major ingredients for making crystalline boba. It is the best fruity and fun option for bubble tea lovers.

I want to share my personal experience with these two gelling ingredients. Both agents yield similar results. But there is little difference in their taste and appearance. Konjac crystal boba is translucent in appearance and slightly crisp in taste. On the other hand agar crystal boba is a bit firmer as compared to other types.

Instructions Details

  • Combine one type of powder from konjac or agar powder, sugar and water in a measuring jar. Put some effort into dissolving sugar and other ingredients and adding sugar content into the saucepan.
  • Boil this mixture on the cooktop in parallel. Continue to whisk the mixture for around 4-5 minutes. The purpose of this is to ensure all the agar powder is well mixed.
  • After boiling the mixture, carefully pour it into a boba mold, ensuring each cavity is filled. Use a spatula or palette knife to evenly distribute the mixture. Leave it for about 15 minutes to allow the boba to cool and set.

  • After waiting 13-15 minutes for the boba to set, softly press from underneath the mold to release the pearls into a bowl filled with ice-cold water. This fast cooling helps solidify their texture. Once cooled, use a strainer to remove the pearls from the water.
  • You can use sweetened syrup liquid to soak the crystal boba.
